Cozy Italian Gnocchi Stew free from Top9 Food Allergens

Warm, comforting, unbelievably yummy & free from Top9 food allergens. Easy to make vegetarian too. Ready in about 40 minutes, can be made ahead. Travel Day favorite!

Ingredients

  • 1 - 2 TBSPS Extra Virgin Olive Oil.
  • 1 lb Italian Sausage, Sweet or Spicy removed from casings. or leave out for vegetarian.
  • 2 large Carrots, peeled and thickly sliced. Organic suggested.
  • 1 Small Onion diced.
  • 2 Large Celery Stalks diced.
  • 2 cloves Garlic, minced.
  • 1/2 teaspoon Oregano, Basil or Italian Seasoning
  • 1 15 oz can Crushed Tomatoes.
  • 1/2 cup Wine - Red or White or water. Be careful here with fining & food allergies.
  • 6 Cups Vegetable Broth. Read ingredients for soy.
  • 1 Pckg Mini Gnocchi or GF Tortellini or pasta. Read ingredients carefully for Gluten.
  • 1/3 cup Gluten Free or AP Flour
  • 1 Cup Dairy-free Milk. We use Oat Milk but any milk that's safe for you.
  • 2 Large Handfuls of fresh spinach.
  • 1 Small Handful of fresh Parsley or Basil. Optional.

Instructions

  • In a large sauté pan, add 1 TBSP EVOO and Italian Sausage if using, breaking up sausage with a spoon.
  • Once sausage is mostly cooked through, add carrots, celery, onion and sauté until veggies are softened about 5 minutes.
  • Add garlic, spices, wine, crushed tomatoes & broth, stirring occasionally for a few minutes.
  • Add flour and stir until incorporated/no lumps. Continue cooking until stew begins to simmer. Lower temperature & cook about 15 minutes, stirring occasionally. Then add gnocchi/gluten free pasta or tortellini. Cook about 8 minutes or until gnocchi is al dente (just cooked/not mushy).
  • Add in fresh spinach and stir. Sprinkle with fresh Basil or Parsley.
  • Optional: if dairy is ok for you, grate Parmesan Cheese over top. This is great as is or served over mashed potatoes (especially if you didn't use gnocchi or pasta) & with safe for your food allergies bread/rolls.
