Food Allergy Friendly Sheet Pan Dinner
Yummy, easy to make in about 30 – 40 minutes. And perfect to make at home or in a vacation rental!
If you’re traveling to a VRBO/Airbnb, this is a great 1st meal on arrival or make ahead & keep in your cooler, if driving.
Or make ahead & put in your “Handy Dandy Backpack cooler bag!”
Of course, this is a wonderful recipe to make when it’s a busy week at home too!
Food Allergy Friendly Sheet Pan Dinner that is free from:
- Peanuts
- Tree Nuts
- Soy
- Fish
- Shellfish
- Gluten (double check gnocchi or omit)
- Dairy
- Eggs
- Sesame
And totally customizable for your specific food allergies/dietary requirements.
A favorite for on vacation as we usually rent a condo/house with a kitchen.

My son Brandon will often prepare this meal in his college apartment. Did I mention his friends think he is an AMAZING cook?!

This sheet pan dinner is food allergy friendly, adaptable, quick & easy & inexpensive.

Food Allergy Friendly Sheet Pan Dinner
Easy, ready in 30 minutes & perfect for people with food allergies. Great to make in a vacation rental.
Servings: 4 people
Ingredients
- 1 lb Carrots Can be diced or whole, peeled
- 2 Zucchini Diced or sliced large
- 1 medium Vidalia Onion or red onion Sliced
- 3-4 small Potatoes Can use Sweet Potatoes too!
- 1 small bag Broccoli or 1 cup fresh broccoli
- 1 TSp Dried Herbs. Safe spice blend or dried oregano.
- 3 TBSP Extra Virgin Olive Oil Good quality
- 1 Pack Boneless, Skinless Chicken thighs cut bite size. Optional or Steak
- 1 pkg Mini Gnocchi (check ingredients for allergens!) Optional
- 1 TBSP Fresh Herbs - Parsley, Oregano Optional
- 1/2 Lemon Optional
- 1 TSp Salt & pepper. Optional
Instructions
- Preheat oven to 425 degrees F.
- Slice/Dice all veggies so that they're about the same size.
- In a roasting pan, oil pan or use foil.
- Add all veggies, olive oil, dried herbs. Toss to combine.
- Add cut up chicken pieces.
- If using, add mini gnocchi, tossing in olive oil.
- Sprinkle salt & pepper over chicken & veggies.
- Squeeze 1/2 lemon over food.
- Bake for 25 - 30 minutes or until chicken is 165 degrees F.
- Remove from oven & serve!
Notes
For people who have food allergies, be very careful of spices, salt & pepper & pans/cooking utensils if preparing in a vacation rental. We often bring our own or put everything in the dishwasher to sterilize.
If you have Alpha-Gal meat allergy this is a great recipe if chicken or turkey is safe for you. Also, great for vegans and vegetarians. Swap ingredients for your food allergies.
