Years ago, we had been invited to a friend’s Super Bowl Party. However, we had just been diagnosed with multiple life-threatening food allergies. Meaning that if even 1 of these allergens even touched our daughter’s plate, she could go into anaphylactic shock. And after just watching our then 15-month-old toddler being revived by doctors in the ER, I was terrified.

But not wanting food allergies to rule our life, I enthusiastically put together a yummy, food allergy-friendly Game Day Feast. Yes, that even a toddler will love! And you can too.

Understanding Food Allergies – Tips

Have you or someone you know been diagnosed with a food allergy? If so, you are in good company. Over 32 million Americans have food allergies. And unfortunately, this number is growing. So, if you are looking for some football food allergy recipes (good to make for any event), look no further.

The Top 9 food allergies are: peanuts, tree nuts, soy, dairy, eggs, gluten, sesame, shellfish, & fish.

As we are managing multiple food allergies for over 20 years now, here are our top recommendations.

  1. First, ask the food allergy person(s) what they cannot eat or have cross contamination with.
  2. Ask what protocols they will need (ex: not serving anything with peanuts/peanut butter or bringing their own safe foods).
  3. Not only food but many people are allergic to latex & environmental allergens. Therefore, watch decorations such as balloons.
  4. Consider a separate table with food allergy-friendly foods. May use a different color decorations: tablecloth, serving ware, plates, etc… for food allergy safe foods & label all food.
  5. Then communicate requirements to everyone who is invited. Always maintain these boundaries.

So, do you want to know the easiest & most adaptable football food allergy recipe? As well as scrumptious & good for vegetarians. Yet, inexpensive & adaptable for almost all food allergies?

Of course you do!

Well, here it is: Our Mini-Stuffed Peppers Recipe

Mini Stuffed Peppers

Great Game Day Appetizer! Can make Vegan, vegetarian & Food Allergy-Friendly!

Ingredients

  • 1 pkg Mini Peppers
  • 2 TBSP olive oil
  • 1/2 TSP Italian Herbs Basil, Oregano, Thyme
  • 1 small Zucchini small dice
  • 1 pkg Ground Chicken or Sausage or Ground Turkey

Instructions

  • Prepare the Vegetarian/Food Allergy-Friendly 1st by adding small, diced zucchini, 1 tsp. olive oil, herbs to a medium sized bowl & mix.
  • Wash mini peppers & cut out top of pepper, keeping top.
  • Stuff peppers with Vegetarian filling. We use red peppers for Vegetarian stuffed peppers. Place on parchment lined oven safe tray. Make sure to add pepper top.
  • Heat oven to 375F & bake for 10 minutes or until cooked.
  • In bowl add meat, herbs & 1 tsp olive oil, mix & stuff remaining peppers. Bake as above.
Mini Stuffed Peppers Vegetarian, Vegan & Food Allergy-Friendly!

Furthering our having different colors for food allergy friendly foods/tables, we make our red Mini Stuffed Peppers vegetarian. And all other color peppers we use low-fat chicken sausage to help those with dietary restrictions like low-fat diets & Alpha Ga meat allergies (always cook separately so no cross contamination & use separate bowls, spoons, etc…).

Fantastic made ahead & pop in oven a few minutes before guests will arrive.
