“What can I make that’s easy, food allergy safe, delicious and not a lot of dishes? After all, it’s my vacation too!” I hear you.

In a vacation rental or at home, this yummy Mexican Carnitas Taco Recipe is the answer. As well as a main dish, these Carnitas are fantastic as an appetizer on top of nacho chips or topping a salad! Additionally, any leftovers can be put back in the Slow Cooker to make Taco Soup.

Another even easier, good for the budget food-allergy recipe is simply add 1/4 cup of food allergy-friendly BBQ sauce to a crockpot/slow cooker and top with either boneless chicken or pork. Therefore, even less prep! And SO delicious you will make this BBQ often.

From busy Back-to-School days to Fall football games, at home, or vacationing at the beach, these yummy slow-cooker Carnitas tacos are super good! On our last vacations, both of the home rentals came with a slow cooker. So, these are fantastic for days sitting on the beach and coming back home smelling the most delicious dinner ready to eat. Therefore, saving us the Must Eat Out Now as we are all starving!

🍹🍋 Makes 1 Joe’s Famous Ultimate Margarita:
1/2 oz. organic agave nectar
1/2 oz. Triple Sec
3/4 oz water
Splash of Grand Marnier
Squeeze from 1/2 fresh lime
Squeeze from 1 small orange wedge
Shake well & serve!
Garnish with slices of lime.
Can also put in freezer for a Margarita slushie.

Yummy Slow Cooker Carnitas Recipe
Delicious, Allergy-Friendly, Quick Prep, Cook once - eat twice authentic Mexican pork carnitas tacos.
Servings: 10 people
Ingredients
- 1 4 lb Pork Shoulder/Pork Butt rinsed & patted dry
- 1 ½ tsp Sea Salt Fine
- 1 tsp Black Pepper
- 1 tsp Oregano
- 2 tsp Cumin Double check for allergens.
- 1 Sweet Onion chopped
- 1 Jalapeno Optional
- 4 cloves Garlic minced
- ¾ cup Freshly squeezed Orange Juice From 2 oranges
- 1 TBSP Olive Oil
- 2 TBSP Hot Sauce Optional - again check for allergens.
- ½ cup BBQ Sauce Optional - to serve with tacos.
Instructions
- In a Slow Cooker, add pork, rubbing all over with salt and pepper.
- Combine Oregano, Cumin, Hot Sauce and Olive Oil together - rub all over pork.
- Top with Onion, Garlic and Orange Juice.
- Cook on High 7 hours or Low, 10 hours.
- If there's a lot of liquid, periodically remove, reserving 1 cup in case need to add back. Pork should be super tender and can shred with 2 forks. Serve with corn/flour tortillas, sliced avocado, guacamole, salsa, Pico de Gallo, diced red onions, corn, BBQ sauce, Cotija or Blue Cheese crumbles or more jalapenos! Sliced fruit and tortilla chips round out our meal. 🙂 This serves 10 - 12 people.
