Ingredients
1pkgMini Peppers
2TBSPolive oil
1/2 TSPItalian HerbsBasil, Oregano, Thyme
1smallZucchinismall dice
1pkgGround Chicken or Sausageor Ground Turkey
Instructions
Prepare the Vegetarian/Food Allergy-Friendly 1st by adding small, diced zucchini, 1 tsp. olive oil, herbs to a medium sized bowl & mix.
Wash mini peppers & cut out top of pepper, keeping top.
Stuff peppers with Vegetarian filling. We use red peppers for Vegetarian stuffed peppers. Place on parchment lined oven safe tray. Make sure to add pepper top.
Heat oven to 375F & bake for 10 minutes or until cooked.
In bowl add meat, herbs & 1 tsp olive oil, mix & stuff remaining peppers. Bake as above.
