1tbspWaterMix with egg & brush over shortcakes prior to baking
Instructions
Prep strawberries by washing well and slicing into medium size bowl, adding in 2 - 3 tbsp of sugar, vanilla extract & if using, Grand Marnier. Allow to sit for about 20 - 30 minutes.
Make Shortcakes
Preheat oven to 400F.
Mix dry ingredients together.
Using 2 forks or pastry blender, cut in cold dairy free butter into dry ingredients until crumbly. I just added to my mixer!
Stir in dairy free milk and vanilla extract, mixing until just combined. Don't over mix!
Dump dough onto floured surface and roll with rolling pin or pat down with your hands.
Using a well-floured water glass or biscuit cutter or if making smaller biscuits could be up to 12 biscuits, cut out shortcakes (see photo).
Optional: could brush with egg yolk & 1 tsp water & brush onto top of each biscuit for good browning color.
Bake about 15 - 18 minutes until lightly golden.
Allow to cool on a wire rack 5 - 10 minutes.
Assemble in parfait/fancy glasses or on a dessert plate. Have fun with this! In a Martini glass, add a dollop of whipped cream, break apart shortcakes to fit glass, add strawberries & a little of the strawberry juice, more whipped cream & a dusting of powdered sugar. A sprig of fresh mint would be AMAZING!
