Ingredients
1lb/boxPastaCan be Gluten-free
1stalkCelery, chopped
1 Red pepper, chopped
1Cucumber, choppedOptional
4-6TBSPSafe Mayo Or homemade
1TBSPDijon MustardOptional
1-2TBSPApple Cider Vinegar
1/2TSPSea Salt
1/2TSPBlack Pepper
2TBSPFresh Parsley, choppedImportant :-)
Instructions
Boil Pasta according to package directions, making sure to NOT overcook pasta!
Once cooked, drain well and allow to cool a few minutes.
While pasta cooks, chop celery, bell pepper, cucumber if using. Add to large bowl & then add cool pasta.
Add mayo, Dijon mustard, Apple Cider Vinegar, salt, black pepper, fresh parsley & stir, May need to add additional mayo if pasta absorbs too much. Cover & place in fridge until BBQ!

Note: Can also add optional items like can of chicken or tuna, fresh uncooked spinach or if safe for your food allergies, hard boiled eggs, to increase protein content.
