Combine first 5 ingredients in a large bowl stirring with a whisk.
Then combine flour, cinnamon, salt, & baking soda in a medium bowl, stir well with whisk.
Add flour mixture to pumpkin mixture, stirring until just combined. do not overmix!
Add in chocolate chips.
Spoon batter into 2 (8 x 4') loaf pans coated with cooking spray. Bake for about 1 hour 15 minutes or until toothpick inserted in middle of loaf comes out clean. Allow to cool for 10 minutes on wire rack. Remove loaves from pans. Enjoy!! Original recipe from Cooking Light - changed to make more food allergy friendly.
