Pumpkin Chip Bread Food Allergy Friendly

Easy to make & adaptable food allergy friendly pumpkin chip bread makes 2 loaves.

Ingredients

  • 1 1/2 cups Brown Sugar
  • 1 10 oz. can Canned Pumpkin
  • 1 small cup Applesauce
  • 1 small cup Vanilla Yoghurt Any kind (DF/nutfree etc)
  • 4 large Egg whites or Egg White Substitution
  • 3 cups Flour Can use GF equivalent
  • 2 teaspoons Ground Cinnamon
  • 1 teaspoon Fine Sea Salt
  • 1 teaspoon Baking Soda
  • 1 cup Allergy-friendly Chocolate Chips Can omit/use Craisins/Raisins instead.

Instructions

  • Preheat oven to 350F.
  • Combine first 5 ingredients in a large bowl stirring with a whisk.
  • Then combine flour, cinnamon, salt, & baking soda in a medium bowl, stir well with whisk.
  • Add flour mixture to pumpkin mixture, stirring until just combined. do not overmix!
  • Add in chocolate chips.
  • Spoon batter into 2 (8 x 4') loaf pans coated with cooking spray.
    Bake for about 1 hour 15 minutes or until toothpick inserted in middle of loaf comes out clean.
    Allow to cool for 10 minutes on wire rack. Remove loaves from pans.

Food Allergy Substitutions & Ingredients

Although we have multiple anaphylactic food allergies, these recipes are safe for us. However, you may need to adjust for your specific allergens.

Be aware that alcohol is not required to be labeled for top food allergens. When in doubt, don’t. Often, I contact the manufacturer to understand their ingredients. Always double check mini-size candies as they may be made in a different facility than their larger counterparts.
