Ingredients
2cupsFlourCan be gluten free
9TBSPButterEarthBalance Softened.
1/2cupBrown Sugar
1/4cupGranulated Sugar
1LargeEggor use applesauce/egg replacer
1TSPVanilla Extract
1/4tspSalt
1cupAllergy-Friendly Chocolate ChipsEnjoyLife or Guittard
Instructions
In a large bowl, mix the softened butter with both sugars until creamy.
Add the egg and vanilla and mix well.
In a medium bowl, sift together the flour and the salt.
Gradually add the flour mixture to wet ingredients. Do not over mix!
Add chocolate chips and mix in gently with spoon.
Cover with plastic wrap and allow to rest in refrigerator at least 1 hour.
Pre-heat oven to 350F.
Roll out dough on a floured work surface to about 1/2 inch.
Cut out larger circles with round cookie cutter to make the Mickey heads. Then use smaller round cookie cutter for the ears. You need 2 ears for every 1 Mickey head.
Arrange on your baking sheet that has parchment paper, the heads making sure that you leave enough room for adding in the ears on both sides.
Add the 2 smaller ears onto the larger circle.
Gently glue/slightly press the small res to the Mickey heads. Using a tiny bit of water may help.
Bake for 12- 15 minutes until the edges are lightly golden. Allow to cool on baking sheet for 3 - 5 minutes. Then take them off baking sheet onto wire rack.
